Either would work, but make sure you're using a good microphone. A Blue Yeti or the AT2020USB+: https://www.amazon.com/dp/B016YL4POK
You'll have more editing software options on the PC, but if you're not going to do a lot of post production, an iPad should be fine.

I mean.... if you connect a decent microphone you could record with an iPad, iPhone or any other device... but I don't think the stock iPad or iPhone mic is good enough... the iMac is a TAD better - but I think any podcaster should at LEAST grab a $100 Blue Pro.
Theres a myriad of other options, too - USB or direct... from $100 -
$500 and beyond.
But you can get a lot at $150-200. IMO, start w/ a $99 Blue and see if
its enough...
