    Title: Roasted Brussels Sprouts w/Bacon
    Categories: Five, Vegetables, Pork
    Yield: 6 servings

    2 lb Brussels sprouts; halved
    6 sl Bacon; chopped
    2 tb Olive oil
    1/2 ts (ea) kosher salt & pepper
    2 tb Balsamic glaze

    Set oven @ 450ºF/232ºC.

    In a large bowl, toss Brussels sprouts, bacon, oil, salt
    and pepper. Transfer to a 15" X 10" X 1" baking sheet.
    Roast, stirring halfway through cooking, until sprouts
    are tender and lightly browned, 20-25 minutes. Drizzle
    with balsamic glaze; serve warm.

    Title: Blueberry Pasta Salad
    Categories: Pasta, Fruits, Cheese, Vegetables, Seafood
    Yield: 10 servings

    1 lb Uncooked bow tie pasta
    1 md Cucumber; seeded, quartered,
    - diced
    1 md Red onion; in 1/4" pieces
    1 md Yellow bell pepper; in 1/4"
    - pieces
    6 oz Crumbled feta cheese
    2 c Fresh blueberries; divided
    1/2 c Extra virgin olive oil
    1/3 c Champagne vinegar
    3 tb Maple syrup
    1 tb Lemon juice
    1 ts Grated lemon zest
    1/4 ts (ea) salt & pepper
    8 oz Smoked salmon fillets;
    - flaked
    1 tb Snipped fresh dill
    1 tb Minced fresh basil
    1 c Sliced almonds

    Cook pasta according to package directions. Drain; rinse
    with cold water. Transfer to a large bowl. Add cucumber,
    red onion, yellow pepper and crumbled feta cheese; set
    aside.

    Using a high-powered blender or immersion blender, puree
    1 cup blueberries, olive oil, vinegar, maple syrup,
    lemon juice, lemon zest, salt and pepper until smooth.

    Pour 1 cup of the blueberry vinaigrette over the pasta
    mixture; toss to coat. Reserve remaining vinaigrette.
    Gently fold in smoked salmon, dill, basil and remaining
    1 cup fresh blueberries. Cover; refrigerate until ready
    to serve.

    Before serving, toss with remaining vinaigrette and
    sliced almonds.
