Title: Rice And Chickpeas With Broccoli Rabe

Yield: 4 Servings
2 bn Broccoli rabe; stems trimmed
1 tb Olive oil -OR-
1/4 c Water
1 sm Onion; finely chopped
2 cl Garlic; minced
3 c Cooked brown rice; cold;
-broken into small clumps
1 1/2 c Cooked chickpeas -OR-
15 oz Can chickpeas;
- rinsed, drained
Salt
Black pepper; freshly ground
Bring a large pot of salted water to a boil over high heat. Cook the
broccoli rabe until tender, about 5 minutes. Drain and coarsely chop.
Set aside.
Heat the olive oil or water in a large skillet over medium heat. Add
the onion and garlic, cover, and cook until softened, about 5
minutes. Add the broccoli rabe and cook for 2 minutes, stirring to
combine. Stir in the rice, chickpeas, salt, and pepper to taste.
Cook, stirring, until heated through, about 15 minutes. Serve hot.
