Title: St. Basil's New Years Cake

Yield: 9 Servings
1 tb Butter; for greasing pan
1 c Butter
2 c Sugar
2 tb Sugar; for sprinkling
3 c Flour
6 lg Eggs
2 ts Baking powder
1 c Milk
1/2 ts Baking soda
1 tb Fresh lemon juice
1/4 c Slivered almonds
1 Cleaned and foil wrapped
Coin
Set oven @ 350°F/175°C.
Grease a 10" round cake pan, with the butter.
In a medium bowl,cream the butter and sugar together until
light in color. Stir in the flour and mix until the batter
resembles coarse bread crumbs. Add the eggs one at a time,
blending each one in well.
In a small bowl combine the baking powder,and milk, add to
the batter and mix well. Finally combine the lemon juice
and baking soda in a small bowl, add to the cake batter
and mix well. Pour into the greased pan, insert the foil
wrapped coin, and bake for 20 minutes.
Remove the cake from the oven, sprinkle with nuts and 2
Tabl. sugar over the cake, then return to the oven and
bake for another 20-30 minutes until the cake springs to
the touch. Allow to cool on a rack for 10 minutes, then
invert the pan onto a cake plate.
Ideally the cake should be served warm, each person gets a
slice of the cake, starting with the most senior member!
Members of the Greek Orthodox Church believe that whoever
gets the coin is blessed.
