change the font size to something larger, which most (if not all) epub

I don't know how since I've never used that app, but it certainly says
    you can ...

Font, Font color, Background, font size, margins,
    line spacing, hyphenation, hyphenation language,
    skip author style options

So if it's a proper epub format, you should be able to change the font
size. If it's a PDF, then it won't be possible since the size is preset
    in the PDF itself.

The pinch with finger does not work inside epub reader app view.
How do you use the zoom feature built into built into ios?

Unpinch to zoom out and pinch to zoom in is the in-built zoom in iOS /
iPadOS. It should work in any app, but probably can be ignored or used
for a different function by some apps (games would be an obvious
example where zoom would be ignored).

Pinch/unpinch not working for epub result.

Maybe better epub reader out there to get which can zoom to text?

    that's in settings>accessibility>zoom.

The iPad Settings>Accessibility>Vision>Display & Text Size is general
options for Bold Text, Larger Text, Button Shapes and On/Off Labels but it
work for all apps and not for the one app that it need to have larger font
    text for.

Larger Text has Larger Accessibility Sizes but it is also not specific to

The iPad Settings>Accessibility>Vision>Zoom bring up a rectangular
magnifying glass that stay on the screen again not working only when you
need it to work. It has a zoom controller and zoom level but it does not
work when you need it to work because it is either on or off for

    also try settings>display & brightness>text size.

keep in mind that although these are system-wide settings, not all apps
use the text apis the way they should. you may need to find another app
that does what you want. hard coding font sizes is generally a bad idea
(there are exceptions, but this isn't one of them).

zoom is not an ideal solution because you'll have to keep moving the
view around to read the entire page.

rendering a larger font has the same end result (larger text) but it
will reflow to fit the view, eliminating the need to manually pinch and
    swipe to read everything.

there's also voiceover where it can read the text aloud.

you may need to search for other ebook readers. apple ibooks properly
supports accessibility settings and dynamic type. others do as well.

I haven't done that specifically on an iPad, I usually download stuff to
Files first, then add them to Books. I don't think the Mail app has any
'Open with...' options, only Quick Look or Save to Files.

If you open the attachment in Quick Look, then select the 'Share' menu (rectangular box with an up arrow in it), it should show a row of apps,
one of which should be Books (orange icon), just select it to open in Books.

Books is a default Apple app that is included on all devices when new.
Unless of course you've deleted the app off your iPad.

I goed to the app store and typed books and the first entry was Audible audiobooks but the second entry was "apple books" with "open" instead of
    "get."

When I opened it has "get started" button after "welcome to apple books"
