I have tried to install trixie, however, I ran into two problems at
    the very beginning:

automatically. I have to go into BIOS for selecting the disk to have
    it booted.

That is likely deliberate on the part of the firmware designers. The
firmware may have an option to boot to the installation media.

At the installation process I chose manual partitioning
and assigned a small partition as fat32 partition at /boot/efi and a
bigger one as root partition. Maybe this was not correct? /boot/efi
is empty now which probably shouldn't be.

    /boot/efi should not be empty.

    root@testing:~# find /boot/efi/
    /boot/efi/
    /boot/efi/EFI
    /boot/efi/EFI/debian
    /boot/efi/EFI/debian/shimx64.efi
    /boot/efi/EFI/debian/grubx64.efi
    /boot/efi/EFI/debian/mmx64.efi
    /boot/efi/EFI/debian/fbx64.efi
    /boot/efi/EFI/debian/BOOTX64.CSV
    /boot/efi/EFI/debian/grub.cfg
    root@testing:~#

When partitioning manually, look at the options of how to use the
partition: swap, ext4, fat, etc. One of those options should be for
EFI. I suspect that it wants a minimum size. I don't know what that is,
but when I let the installer do it for me, I get a UEFI partition of
    616M.

.) When I type, even on the console, there is a delay. Reminding me
on working remotely with a not really good connection. Mouse is also
crazy, one is super slow, the other one super fast, also with delay.

I suspect we will need to know a lot more about your system than you
describe here. Two things to look at:

If any of the mice or keyboard use USB or Bluetooth, make sure you have
the relevant firmware installed and that it gets loaded. Similarly for
    wifi.

You might also install gpm and see how they do in a console.
