I've never been to Mexico but I have had some authentic Mexican food that was not Tex-Mex. (I had some neighbors who were from central Mexico and we were friendly.) Their food was based on a lot of fish and seafood and seasonal vegetables. It did not revolve around tortillas, although they did have a comal they used to make them.
