• Happy soup mix!

    We had a busy day and no real time for cooking so made soup in the
    crockpot for dinner.

    It started with the leftovers of a home made rotisserie chicken then
    built out from cans as I went along. I didn't have the right mix of
    fresh or frozen for it but this worked well.

    'Carol Can-do soup'

    1.5 cups shredded cooked chicken
    1 can diced tomatoes
    1 can Veg-all
    1 can Cannalini beans
    32 oz chicken broth
    1 TB Chicken broth powder
    1/2 TB basil
    1 tsp oregano
    1 tsponion powder
    1/2 tsp powdered garlic
    1 tsp black pepper
    1/2 tsp celery seed

    Add all liquid from cans, add rest and cook on low for 6 hours (more
    doesn't hurt it). Tortellini would match but I don't have any.

    It tastes a bit Italian in overall effect.

    Being served with a particularily nice batch of buttermilk bread.

    It looks rather good, and I'd also added some chopped
    onions along with the onion powder. But if you didn't
    have any, the powder would be fine.

    have any, the powder would be fine.

    Chuckle, in this case,I had no more room to get them in there so used
    the powder to not overfill it!
