    Definitely cut the potatoes and carrots into smaller pieces. I can't
    say I've ever had to add gelatin to a beef stew. Perhaps that is what
    one does when using a pressure cooker. To my way of thinking, stew is a
    long slow braise after browning the meat and adding the vegetables to
    the stock.

    say I've ever had to add gelatin to a beef stew. Perhaps that is what
    one does when using a pressure cooker. To my way of thinking, stew is a
    long slow braise after browning the meat and adding the vegetables to
    the stock.

    Collagen turns to gelatin between 160 F and 205 F. If your meat
    doesn't have a lot of connective tissue, or you just like an
    extra luscious mouthfeel, you can add gelatin.

    He cooked the beef at 140 F for 16 hours. How much longer and slower
    do you want? He applied pressure after he added the potatoes.

    with water to begin with. It was cooked for an hour or so, then the
    water was dumped out, the meat was rinsed, and clean water was added.
    This was done for clarity. The beef was cooked until done. A roux, of
    oil and flour, was made in a frying pan and added to the cooker. The
    veggies were added next. That's all, folks.

    I don't know about cooks but I was in a computer shop the other day. The
    guy works fast and cheap, but he sure doesn't spend any time on
    cleanliness. The shop was cluttered with junk and dusty as hell. The
    owner smelled bad.... really bad. He didn't have the nicotine stained
    fingers and teeth of a smoker but he had that stench of stale smoke but
    that was barely detectable compared to the stink of clothing that had
    not been washed in weeks. Thank goodness he solved my issues quickly so
    I could get outside and get some fresh air. I had smelled body stink
    like that since the days I worked with long haul truckers.

    when meat is boiled for stock. I suppose discarding all the water
    is more efficient.

    Perhaps if Asians don't like boiling blood in water, they should
    drain it out of the carcass, the way Western butchers do. That
    would leave the blood available for such delicacies as black
    pudding and kiszka.

    You are correct; it's not blood it's myoglobin. That's why the excuse
    some people give about not wanting a medium-rare or rare steak because
    of the "blood" is specious.

    Can't they smell themselves? There is not much worse than being in an
    enclosed space with someone who has intense B.O. I used to work with a
    temp who had horrible B.O. The company hired two temps and the other
    poor guy had to share a cubicle with this dude. Our supervisor had to
    have a talk with him. He claimed to have a medical condition which
    caused him to perspire more than most people. Maybe yes, maybe no; the
    funk was unbearable. There were other issues, though; he was
    chronically late, always with some lame excuse. The company wound up
    hiring the other temp full time and told the agency not to send the
    other guy back.

    Part of my extended family are descendants of them. My niece's husband
    has a Spanish Jewish ancestry and his ancestors back home had converted
    to Catholicism. The Inquisition started shortly after the marriage of Ferdinand and Isabella and their marriage united their two kingdoms gave
    them the power need to defeat the Moors. I guess the Jews became their
    targets after they ran out of Moors.

    Spanish Catholicism was not very tolerant of heretics. It was the same religious fervor that led Spain to attempt to invade Britain and return
    it to Catholicism. That didn't work out so well for them.

    It takes guts to confront them these days. People will complain about harassment and lodge a human rights act. In my last job I had two
    co-workers who had smell issues. One of them had BO and it was hard to understand because he had enough uniform shirts issued that there was no
    need to wear the same shirt every day. The other always smelled like
    shit. Literally. I don't know if he didn't know how to wipe his butt or
    if he had stinky skid marks.

    Some of the long haul drivers were the worst. They would be on the road
    for 5 days or more. They drank a lot of coffee and smoked a lot of
    cigarettes and slept in their trucks. They probably never showered or
    brushed their teeth. They had a combination of stenches, dental decay
    breath, coffee breath, tobacco breath, BO, rancid clothing and diesel
    fuel.

    They weren't all like that. Some of them were very clean. They deserve
    credit, but those dirty ones leave a hell of an impression.

    We never had sex education, aside from the schoolyard.

    All boys high school, junior year, we had a lay teacher for English.
    One day, when class was going to start, he said "close the doors"
    we got some stories about the problems VD can cause and how to prevent
    it. A few more real life stories was probably the best education about
    life in 12 years of school.

    out of each tube. Then you'd eat the little worms and discard the
