    What's your plans for this first day of the work
    week's dinner? Cooking, eating out, or cleaning
    up some weekend leftovers?

    Even though I posted in the "Trader Joe's" thread
    that I will be finishing off the Mandarin orange
    and vegetable rice dish, I've made a generous
    bowl of albacore tuna fish. It may or may not
    end up being supper with the chicken and rice
    dish to be finished off Tuesday. Either way,
    the tuna will be shared with two neighbors for
    either their supper or for their work lunches.
    Too bad I'm too lazy to go to the store for a
    bag of potato chips. Those would go quite well
    with a tuna sandwich.

    I am using some leftovers. We had too many lamb chops last night so we
    stripped the meat off the leftovers and simmered the bones from all of
    them to make a stock and turned that into a curry base.

    and scalloped potatoes with cubed ham is on the menu within
    the next 10 days or less.

    I like these potato dishes that ham can be added to make
    them a main dish instead of a side dish.

    I bought a 3-lb. bag of russet potatoes this past Friday
    and scalloped potatoes with cubed ham is on the menu within
    the next 10 days or less.

    I like these potato dishes that ham can be added to make
    them a main dish instead of a side dish.

    Most of those potato dishes have so much dairy in them, the
    ham isn't necessary.

    On those rare occasions when I make scalloped potatoes, I
    serve them with broccoli for a complete meal.

    I had some Neoguri noodles last night. These are thick Japanese udon
    style noodles with a Korean soup base. I used half of the soup packet to
    keep a rein on the spice level. This is advisable if you're not Korean.
    1/3 packet might be a better choice if you've never had Korean noodles.
    If you're not into spicy, you shouldn't be touching the stuff.

    My daughter baked up some brownies using some mochi brownie mix that was
    given to us. This is a mix that uses sweet rice flour and tapioca starch instead of flour. It's actually a gluten-free brownie mix. The brownies
    are pretty good because they're less sweet than regular brownies.

    I will admit my recipe for 'scalped' potatoes does have
    about a cup and a half of milk, plus a generous amount
    of cheese.

    I've given some serious thought of adding little florets
    of broccoli to the ham and potato dish. But I'm thinking
    the prolonged cooking time for the potatoes to be tender
    would turn the broccoli to mush. Broccoli on the side
    would be the better option.

    "white trash" by some of the idiots who post here but there is nothing
    wrong with a main dish meal that tastes good. :)

    I don't think casseroles are white trash; I just don't care for
    that sort of thing. Too soft, too saucy, calorie-to-nutrition
    ratio is too high.

    What about things like lasagna,pastitsio or mousaka? Mexican casseroles?

    Lasagna about once a year. None of the rest.

    My husband likes lasagna, scalloped potatoes, and chicken divan. I
    make those dishes for him once in a great while. Although it's
    more likely to be turkey divan, right after Thanksgiving.

    Yet if you go to a translation site and enter "shrimp" they translate it
    to gamberetto. Scampi is a shrimp=like critter, but is also used for
    large shrimp. It is also known as langostine or Norwegian lobster.

    Even though I posted in the "Trader Joe's" thread
    that I will be finishing off the Mandarin orange

    dish to be finished off Tuesday. Either way,
    the tuna will be shared with two neighbors for
    either their supper or for their work lunches.

    with a tuna sandwich.

    Breakfast this morning was an omelette made by my daughter. It was
    filled with potatoes, Portuguese sausage, and cheese. I think she's
    better at making rice than I. She should cook more.
