• Monday Night Tacos

    I had some leftover pork tenderloin that had been marinated with a
    Mexican sort of mixture and grilled. I sliced it up, made some pico de
    gallo and some guacamole, cooked up some black beans with onion, garlic,
    hot peppers and some cumin, chili powder and chipotle and mashed them.
    We had picked up some soft tacos. We threw them together to make black
    bean and pork tenderloin tacos and they were amazing.

    I had a late lunch so tonight whenever I was a bit hungry
    I just snacked around. Cleaned up a leftover too and freed
    up some 'frig space.
