Appetit on Youtube specializing on fermented foods. His instructional
video on sauerkraut kicked off my hobby on that topic.
Anyhoo, he launched his own youtube channel some time ago and I'll watch
it on occasion. His antics have seemingly and thankfully simmered
down.
He visited a local restaurant that created a vegetarian sandwich
inspired by the classic Reuben and it seems a bit compelling. I've never
done any cooking with collared greens, but have enjoyed it copious times
at local soul food restaurants in my area. One aspect that caught my
attention was the three-hour simmer on the greens in preparation for
making the sandwich.
