I cut off a 1/4" slice from the brick, then a few cross cuts and have
chunks to add to the egg.

Personally, I'd rather use a slice of American cheese but my wife is saying that
she doesn't like that. This makes my life a lot harder. I think my wife is losing
    it.

She's interested in better cheese, so she must have a boring life?

I don't have any problem with Mexican cheese. I'd buy it if it was in the stores.
As it goes, I'm not really into cheese. We have a Mexican girl at work. Her favorite chorizo is the red sludge one. The Mexican chorizo that I now buy is somewhat less sludgy. I also make a pretty good chorizo, although a Mexican would
probably think it's bland gringo food. Of course, they would be right.

Lack of spice and seasoning has nothing to do with the fact that most
Mexican chorizo available where I've had it on the mainland is greasy
sludge. It's not bland, but if you want to eat something that will run
right through your digestive system Mexican chorizo is the way to go.
    I'd rather not.

You're young. When I was younger, I'd use a grater on cheese. These days, I can't
abide by that. Breakfast this morning was a ham and cheese omelette. It took me
about 7 minutes to cook it up. I don't want to spend more time on cooking these
days. The cheese was from a bag that said "Mexican Cheese." The omelet was a real
fattie. The cheese didn't taste like anything. Maybe I'm losing my buds.

We might be South of the border but we're nowhere near Mexico. "Mexican Cheese"
is good enough for the da Hawaiians/Americans. Real Americans don't want real
Mexican cheese. They sure don't want real Mexican chorizo.

Portuguese chorizo is wonderful. The Mexican chorizo I bought turned
    into greasy sludge.

"Mexican" sounds as cheap as "Chinese" or "Vietnamese".

They're not cheap anymore with trump's tariffs.

I don't know. Trump changes tariffs every week.

He changes by the hour, or even shorter time frames.

At least until he burns himself out.

Unfortunately, a lot of his psychotic actions will result in long term
    damage.

Portuguese chorizo is wonderful.  The Mexican chorizo I bought turned
into greasy sludge.  The "Mexican cheese" I think you're talking about
(sold shredded) is a blend of cheeses that are not really Mexican.  You
might find it being used on Tex-Mex style tacos.  I've only ever had two >>> actual Mexican cheeses and they are quite similar to each other.
Crumbly cheese (not really conducive to shredding), they melt
beautifully.  Those would be queso fresco and queso blanco.  Mild but
distinctive taste, usually made with a blend of cow and goat milk.

    Jill

I don't have any problem with Mexican cheese. I'd buy it if it was in
    the stores.
As it goes, I'm not really into cheese. We have a Mexican girl at
    work. Her
favorite chorizo is the red sludge one. The Mexican chorizo that I now
    buy is
somewhat less sludgy. I also make a pretty good chorizo, although a
    Mexican would
probably think it's bland gringo food. Of course, they would be right.

Lack of spice and seasoning has nothing to do with the fact that most
Mexican chorizo available where I've had it on the mainland is greasy sludge.  It's not bland, but if you want to eat something that will run
right through your digestive system Mexican chorizo is the way to go.
    I'd rather not.

    Jill

With crone's disease, your Majesty should never eat any type of chorizo.
