into greasy sludge. The "Mexican cheese" I think you're talking about
(sold shredded) is a blend of cheeses that are not really Mexican. You
might find it being used on Tex-Mex style tacos. I've only ever had two
actual Mexican cheeses and they are quite similar to each other.
Crumbly cheese (not really conducive to shredding), they melt
beautifully. Those would be queso fresco and queso blanco. Mild but
distinctive taste, usually made with a blend of cow and goat milk.

I cut off a 1/4" slice from the brick, then a few cross cuts and have
chunks to add to the egg.
Personally, I'd rather use a slice of American cheese but my wife is saying that
she doesn't like that. This makes my life a lot harder. I think my wife is losing
it.

As it goes, I'm not really into cheese. We have a Mexican girl at work. Her favorite chorizo is the red sludge one. The Mexican chorizo that I now buy is somewhat less sludgy. I also make a pretty good chorizo, although a Mexican would
probably think it's bland gringo food. Of course, they would be right.

Lack of spice and seasoning has nothing to do with the fact that most
Mexican chorizo available where I've had it on the mainland is greasy sludge. It's not bland, but if you want to eat something that will run

Portuguese chorizo is wonderful. The Mexican chorizo I bought turned
into greasy sludge. The "Mexican cheese" I think you're talking about
(sold shredded) is a blend of cheeses that are not really Mexican. You
might find it being used on Tex-Mex style tacos. I've only ever had two actual Mexican cheeses and they are quite similar to each other.
Crumbly cheese (not really conducive to shredding), they melt
beautifully. Those would be queso fresco and queso blanco. Mild but distinctive taste, usually made with a blend of cow and goat milk.

I cooked Mexican chorizo once. It looked like I was frying a colony of
red ants. I went back to Portuguese. ;)
