Obviously I haven’t had time to explore the new features of macOS 15 but I notice iCloud Pinning is now available. I hadn’t realised it’s also a feature of iCloud on Windows.

I don't use iCloud. A brief scan o fteh list of new "features" reveals nothing
I'd want that would cause me to change my macOS version. Just a few app updates AFAICT.

Agreed. There are some apps which need a lot of typing, and it's easier to do that on a physical keyboard than on an iPhone screen.
