I've successfully completed the migration for old to new, so far so
good. Updated the OS and a bunch of apps. Downloaded and installed
Rosetta so I can use things like Photoshop. All hunky-dory, except:
It hasn't transferred the saved passwords in Safari!
I keep getting requests from "accountsd" to enter my icloud keychain password, trouble is I've no recollection of ever setting one up. Any
clues as to how I can recover it?

Never had to use it but there’s some info on how to reset the password.

You could first try your user login password (usual default?).
Bah! Just realised you said iCloud Keychain - maybe this can help or you might need to call Apple Support :(

Photoshop doesn't need Rosetta.
On first launching it I got a pop-up saying I would have to install
Rosetta to use it. NB it's Elements, not the pro package.

most are native, with just a few left to update.
